Smoky BBQ Beans

Smoky BBQ Beans

  • 4 tbsp olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, chopped
  • 2 celery sticks, chopped
  • 1 large carrot, chopped
  • 1 tsp fennel seeds
  • 2 tsp dried oregano
  • 2 tsp smoked paprika
  • 1 tbsp chipotle paste
  • 1 tbsp molasses
  • 450 ml/ 16 fl oz passata
  • 400 g/ 14 oz canned cannellini beans,
  • drained
  • salt and pepper, to taste
1. Heat the oil in a wide saucepan over medium heat. Add the onion, garlic, celery and carrot and sweat with a lid on for 15 minutes, or until translucent and softened.
2. Add the fennel seeds, oregano, paprika, chipotle and molasses. Cook for 5 minutes to allow the sugars to start to caramelize.
3. Add the passata and beans and cook for a further 10 minutes.
4. Season with salt and pepper and serve.
