ROASTED BALSAMIC & HONEY ONIONS
 
Preheat the barbecue. Divide the onion wedges between 4 squares of double-thickness foil. Fold up the sides of the foil a little.
Drop the honey and balsamic vinegar over the onions, add the thyme and season to taste with salt and pepper.
Loosely seal the parcels and cook over hot coals for 20-25 minutes, or until the onions are tender. Open the package and serve immediately.

SERVES 4

4 red onions, peeled and cut into
chunky wedges
4 tsp honey
4 tbsp balsamic vinegar
1 tsp finely chopped fresh thyme
salt and pepper
