HOT & SPICY SPARE RIBS

HOT AND SPICY SPARE RIBS

 
» Preheat the barbecue. Put the onion, garlic, ginger, chilli and soy sauce into a food processor and process to a paste. Transfer to a jug and stir in the lime juice, sugar and oil and season to taste with salt and pepper.
» Place the spare ribs in a preheated wok or large, heavy-based saucepan and pour in the soy sauce mixture. Place on the hob and bring to the boil, then simmer over low heat, frequently stirring, for 30 minutes. If the combination appears to be drying out, add a little water.
» Remove the spare ribs, reserving the sauce. Cook the ribs over medium-hot coals, turning and frequently basting with the sauce, for 20-30 minutes. Transfer to a large serving plate and serve immediately.

  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 2.5-cm/1-inch piece
  • fresh ginger, sliced
  • 1 fresh red chilli, deseeded and chopped
  • 5 tbsp dark soy sauce
  • 3 tbsp lime juice
  • 1 tbsp palm or muscovado sugar
  • 2 tbsp groundnut oil
  • 1 kg/2 1b 4 oz pork spare ribs, separated
  • salt and pepper
