Sweet and Sour Pork Ribs
Ingredients
» 400g meaty pork ribs | » 20g spring onions |
» 30g oil | » 4g garlic, peeled and minced |
» 8g tapioca flour | » 10g coriander |
» 10g sugar |
To taste: Pepper, vinegar, chilli sauce, fish sauce, seasoning (salt and MSG)
Preparation of Sweet and Sour Pork Ribs
- Wash and cut the ribs into 3cm pieces, parboil and wash again. Drain and add the fish sauce, seasoning and pepper and leave to marinate.
- Wash and drain the spring onions and coriander. Cut the white and green parts of the onions into 3cm pieces.
- Mix more fish sauce with the chilli sauce, vinegar and sugar to make the sweet sauce.
- Heat the oil, coat the ribs with the tapioca flour to make them sticky and fry until golden. Remove to a plate.
- Fry the garlic with the white spring onions, add the sweet sauce and a ladle of water and bring to the boil. Add the ribs and cook, covered, over a low heat.
- Once the sauce has combined with the ribs, add the green spring onions and stir. Remove from the heat, transfer to a plate and sprinkle with the pepper and coriander.
