SUMMER PUNCH

 

Pour the wine into a punch bowl or large glass serving bowl. Add the honey and stir well. Add the brandy, if using.
Cut any large berries into bite-sized pieces and place all the berries and mint sprigs into the wine.
Leave to stand for 15 minutes, then add the sparkling water and ice cubes. Ladle the punch into glasses or punch cups ensuring each has an ice cube and a few pieces of fruit. Serve immediately, decorated with mint sprigs.

SERVES 8

750 ml/1 1/4 pints rosé wine, chilled
1 tbsp honey
150 ml/5 fl oz brandy (optional)
115 g/4 oz mixed summer berries,
such as raspberries, blueberries
and strawberries
4-4 fresh mint sprigs, plus extra
to garnish
600 ml/1 pint sparkling water,
chilled
ice cubes
