SCALLOPS WITH A DRESSING OF SPRING-ONION OIL
Very attractive when served in the shell.
INGREDIENTS
» 2 tablespoons pure vegetable oil
» 1 onion chopped finely
» 100 ml spring-onion
» 2 tbsp roasted peanuts, coarsely crushed (optional)
» 410 Scallops
STER BY STEP!
1/ Put2 tablespoons vegetable oil in a pan. Sauté the onion a nice brown. Strain the onion and leave it to drain on kitchen paper.
2/ Combine 1100 ml spring-onion oil with the fried onion and if desired, stir in the peanuts too.
3/ Steam or griJ!the scallops: fry them in a little oil until they are ready
4/ Put one tablespoon of the oil mixture over the scallops and serve them,
