RUBS

Rubs are the dry equivalent of marinades and consist of a mixture of dried herbs and spices, salt and/or sugar. They are rubbed into raw food either just before cooking or up to 24 hours ahead. If leaving for the maximum length of time, you shouldn’t add salt until just before cooking. Otherwise,
moisture will be drawn out of the food and the result will be dry.
Rubs made up of dry ingredients keep exceptionally well in an airtight container, although you should avoid storing them for longer than three months as ground spices will begin to lose their flavour.
