RASPBERRY CRUSH
 
Reserve a few raspberries for decoration, then put the remainder in a blender or food processor. Add the orange juice with the motor running, and blend for one minute.
Add the honey to taste and blend for 30 seconds. Half fill four tumblers with crushed ice, pour over the raspberry mixture and top each up with the soda water. Decorate a scoop of raspberry sorbet on top and serve immediately, decorated with the reserved raspberries.

SERVES 4

300 g/101/2 oz fresh or thawed
frozen raspberries
4 tbsp orange juice
1-2 tsp honey, or to taste
crushed ice
300 ml/10 fl oz soda water
4 scoops raspberry sorbet
or frozen raspberry yogurt
