GUACAMOLE
 
Shred the avocados in half lengthways and twist the halves in opposite directions to separate. Cut the stone with the point of a sharp knife and lift out. Peel, then roughly chop the avocado halves and place in a non-metallic bowl. Press over the lime juice and add the oil.
Mash the avocados with a fork to the desired consistency – either chunky or smooth. Mix in the onion, chilli, garlic, cumin and chopped coriander, then season to taste with salt and pepper.
Remove to a serving dish and serve immediately to avoid discolouration, garnished with coriander sprigs.

2 large ripe avocados
juice of 1 lime, or to taste
2 tsp olive oil
1/2 onion, finely chopped
1 fresh green chilli, such as
poblano deseeded and finely
chopped
1 garlic clove, crushed
1/4 tsp ground cumin
1 tbsp chopped fresh coriander,
plus extra sprigs to garnish
salt and pepper
