GRILLED TIGER PRAWNS WITH SALT-CHILLI-LIME DIP
Black from being grilled on charcoal — that id bow grilled scampi is served on your plate. It amazed me every time how the local population succeeded in removing the black-blistered shell of the scampi with their chopsticks and so keep their hands clean.
INGREDIENTS
» 500 g tiger prawns
» 2 tbsp rice wine
» 1 tbsp ginger, chopped finely
» 1 shallot, chopped finely
» 1 clove of garlic, finely chopped
» 1 1/2 tbsp sugar
» 1 tbsp oyster sauce
» 1 tbsp fish sauce
» 1 tsp sesame oil
GARNISH
» small bottle of chilli sauce
STEP BY STEP!
1/ Marinate the scampi with the other ingredients for 30 minutes.
2/ Grill the scampi in the shell, preferably over a charcoal fire
If you wish you can also do this in a grill pan.
3/ Serve with chilli sauce.
