CRUNCHY GINGER APPLES
Preheat the barbecue. Cut the apples in half and then remove seeds and cores.
Place the lemon juice, butter and sugar in 3 separate small dishes. Dip the cut side of the apples first in the lemon juice, then in the melted butter, and, finally, in the sugar.
Put the apples, cut-side down, on the grill rack and cook over medium-hot coals for 5 minutes, or until the sugar caramelizes and the apple surfaces are dark. Turn and cook for a further 5 minutes, until the skins are charred, but the apples are still crunchy.
Arrange the apple halves in individual serving dishes (allowing two halves per serving), cut-side up, and divide the ginger among them. Serve immediately.

2 tbsp lemon juice
2 tbsp butter, melted
2 tbsp demerara sugar
4 tbsp diced stem ginger
