CARAMELIZED APPLE RINGS

CARAMELIZED APPLE RINGS
 
Preheat the barbecue. Remove and discard a thin slice from the top and bottom of the apples. Remove the cores and slice each apple into three thick rings. Placet in a bowl and toss with the lemon juice to prevent discolouration.
Mix the sugar and cinnamon, and sprinkle over the apples, tossing thoroughly to coat. Clean with melted butter on both sides and place in a hinged wire grill basket, reserving any juices in the bowl.
Cook over hot coals, turning occasionally and brushing with the remaining butter and reserved juices, for 5—6 minutes, until golden and slightly charred. Serve immediately.

4 crisp eating apples, such as
Braeburn
juice of 1/2 lemon
3 tbsp demerara sugar
1/4 tsp ground cinnamon
2 tbsp melted butter
