Piti Piri Chicken

Piti Piri Chicken

8 chicken drumsticks
1 h tsp crushed dried red chillies
2 garlic cloves, crushed
1 tsp dried oregano
2 tsp smoked paprika
juice of h lemon
salt and pepper

1. Preheat the oven to 2200C/4250F/Gas Mark 6. Cut deep slashes into the thickest parts of the meat.
2. Place the chillies, garlic, oregano, paprika and lemon juice in a large mixing bowl. Season to taste with peppe and salt then mix together. Put the chicken and turn to coat evenly.
3. Arrange the chicken in a single layer in a large, shallow roasting tin. Bake it in the preheated oven for 20-25 minutes, turning occasionally. Check the chicken is tender, and the juices run clear when a skewer is inserted into the thickest part of the meat.
4. Serve with lemon wedges, mixed salad and tortillas, if desired.
