STEAMED STUFFED RICE-BATTER PANCAKES

STEAMED STUFFED RICE-BATTER PANCAKES INGREDIENTS
BATTER
» 125 g rice flour
» 125 g tapioca flour
» 1/4 tsp salt
» 750 ml cold water

STEAMED STUFFED RICE-BATTER PANCAKES
FILLING
» 2 tbsp pure vegetable oil
» 4 small shallots, finely chopped
» 1 or 2 cloves of garlic
» 5 dried tree-ear mushrooms, dipped in water
for 30 minutes, hard parts rémoved and finely chopped
» 300 g pork, chopped
» 1 tbsp fish sauce
» 1/4 tsp sugar
» black pepper (season to taste)
GARNISH
» 250 mt Nuoc Cham dip sauce
» fresh herbs (mint, coriander)
» cucumber, julienne (optional)
» handful soya bean sprouts (optional)
» 50 g deep-fried shallots
» sizeable red chilli pepper, fine julienne (optional)

STEP BY STEP!
Batter
1 In a bowl mix the two different kinds of flour and the salt together. Pour in half of the water and stir well. Take care that there are no lumps in it.
2 Next, pour in the other half of the water without stirring.

Filling
1 On a low heat, first sauté the shallots, adding the finely chopped garlic and fry them until the garlic begins to smell.
2 Now add the tree-ear mushrooms and cook for a few minutes until they are covered with the shallots and garlic. Finally, add the pork and fry until well done and then season it with fish sauce, sugar and pepper.
