GLUTINOUS RICE AND CHICKEN
There are many variations of this dish, including Chinese sausages, paté and various kind of fruit.
INGREDIENTS
300 g sticky (glutinous) rice, soaked for one night in
cold water or at least 3 hours in hot water
1 tbsp turmeric powder
200 g green mung beans, soaked for one night
in water
Two chicken breasts, cut into strips
One clove of garlic, chopped finely
1 tbsp fish sauce
STEP BY STEP!
» 1 tbsp sugar
» 1 tbsp pure vegetable oil
» 3 spring onions, in 3 cm pieces, julienne
GARNISH
» black pepper
» a handful of coriander
» 4 tbsp deep-fried shallots
» cucumber salad
Let’s cook
1/ Rinse the sticky rice several times and leave it to soak overnight. Do the same with the green mung beans.
2/ Steam the rice in a steam basket for 30 minutes until it is soft. Stir one tablespoon turmeric into the sticky rice.
3/ Pound, the beans in a mortar to a sticky mass, shape it into a ball and set it aside.
4/ Marinate the chicken for 15 minutes with the garlic, fish sauce and sugar.
5/ Put a little oil in the wok and stir-fry the chicken for a few minutes. Finally, add the spring onions.
6/ Put the chicken on the sticky rice.
7/ Grate a few flakes off the beanball and put these on the sticky rice.
8/ Serve with fresh black pepper from the peppermill, coriander, deep-fried shallots and cucumber salad.
