Stuffed sticky rice balls with sugar and sesame seed
INGREDIENTS | » 20 g rice flour |
» 405m! coconut milk | » 200 m! warm water |
» 4 tbsp sugar | » 100 g palm sugar, in cubes, of 1 x 1 cm, 30 cubes |
» 180 g glutinous-rice flour | » 2 tbsp roasted sesame seed |
STEP BY STEP!
1 Heat the coconut milk with the sugar and set it aside.
2 Mix the two kinds of flour and add warm water to it. Make a solid, hard dough.
3 Take a small piece of dough the size of a marble, flatten it and put a piece of palm sugar in the middle. Fold the sides to close it in, and make it into a small ball.
4 Repeat this until you have 30 little balls.
5 Put a pan of water on the heat to boil and add the balls in batches of 8. As soon as the little balls float upwards, remove them from the boiling water. Cool them quickly in ice-cold water.
6 Pour the sesame seeds on the working surface and roll the balls through them.
7 Put 8 little balls in a small serving bowl and pour the tepid coconut mixture over them.
