Deep-Fried Cake

 

DEEP-FRIED DOUGH FILLED WITH MUNG BEANS AND COCONUT

Filling

1 Soak the green beans in water for 2 hours.
2 Bring a quantity of water to the boil and boil the green beans until they are soft. Leave the green beans to drain and then puree them. Combine these beans with the sugar in a mixing bowl.
3 Put the oil in a pan and stir-fry the bean-and-sugar mixture together with the coconut pulp and the vanilla extract.

STEP BY STEP!

1 Peel the potatoes and boil them till they are done. Puree the potatoes.
3 Put the sugar and fresh water in a pan and boil this until it turns into a thick syrup.
   Leave syrup to cool for a little while.
4 Using a wooden spatula mix the syrup into the flour mixture. 
5 Leave it to cool a little more and mix the potatoes and oil through it. 
   You will now have a glutinous, smooth mass. 
6 Wet your hands and take out a quantity of dough the size of a golf ball. Flatten it,
   put in the middle a small amount of the bean mixture and fold it shut again into a small ball. 
   Roll the little ball in the sesame seeds and deep-fry it for about 10 minutes at 175oC. 
   When the little cake floats to the top, it is ready.

 

WORTH KNOWING ABOUT DEEP-FRIED CAKE
There are two versions of Banh Ran, the savoury version filled with mince, noodled and mushroom (Banh Ran Man) and the sweet version with green mung bean and coconut (Banh Ran Ngot). The sweet ones can be recognized by the sesame seeds on the outside.
