Vietnamese rice cake for New Year

 

INGREDIENTS »  2 tbsp fish sauce
» 200 g mung beans »  pepper
» 500 g glutinous rice »  4 dong leaves or banana
» pinch of salt »  bamboo cord or string
» 175 g pork bacon

STEP BY STEP!

1  Soak the mung beans overnight in cold water, rinse them under cold water and steam them till done. Soak the glutinous rice separately overnight.

2  Crush the beans to a mash with a pinch of salt.

Carve the bacon into thin strips and marinate them with 2 tablespoons of fish sauce and a little pepper.

4  Put two leaves in a T-shape, put another two leaves diagonally across them, so that you have a star.

5  In the centre of the leaves put half the glutinous rice, put half of the bean mixture on it, with the strips of bacon on top. Next the second half of the mung beans and finally the rest of the rice on top.

6  Now fold the leaves shut to a heat cube and fasten it with string.

7  Cook the rice cake for eight hours in the water on a low heat.

8  Rinse the cake with cold water and put a heavy weight on it for one night.
