Sweet Sour Ribs

Sweet Sour Ribs

  • 4 spring onions, finely chopped
  • 3 tbsp lemon juice
  • 150 ml/5 fl oz white wine vinegar
  • 2 tsp English mustard
  • 3 tbsp muscovado sugar
  • 3 tbsp Worcestershire sauce
  • 5 tbsp sun-dried tomato purée
  • 1 kg/2 lb 4 oz pork spare ribs
  • salt and pepper
1. This recipe requires a barbecue. Preheat the grill. Put the spring onions, lemon juice, vinegar, mustard, sugar, Worcestershire sauce and sun-dried tomato purée in a pan, season with pepper and salt and bring to the boil, stirring well to mix. Reduce the heat and simmer, occasionally stirring, for 30 minutes. Transfer the saucepan to the side of the barbecue.
 
2. Using a sharp knife, make deep scores all over the racks of ribs, then brush them all over with the sauce.
3. Grill over a medium barbecue, turning and frequently brushing with the sauce, for 1-1 1/4 hours, or until cooked through and tender. Serve immediately.
