Spicy Baby Back Ribs

Spicy Baby Back Ribs

 

4 baby back pork ribs, each weighing
500 g/ltb 2 oz

spicy marinade

2 tbsp soft brown sugar
3 tbsp Old Bay seasoning
1 tbsp Worcestershire sauce
4 tsp salt

apple glaze

150 ml/5 fl oz apple juice
2 tbsp olive oil
2 tbsp cider vinegar
1. This recipe requires a barbecue. To make the spicy marinade, mix all the ingredients in a large bowl then add the pork ribs and turn to coat thoroughly.
2. Lay the ribs in a non-metallic dish, adding any remaining marinade from the bowl. Cover it with clingfilm and place in the refrigerator for at least 12 hours to marinate.
3. Remove the ribs from the refrigerator for at least an hour before you want to cook them. This will allow them to come back up to room temperature.
4. To make the apple glaze, mix the apple juice, olive oil and cider vinegar in a small bowl and set aside.
5. Cook the barbecue for indirect cooking and preheat to medium-low.
6. Cook the ribs on the barbecue grill for 4 hours, with the lid on. Clean the ribs on each side with the apple glaze every 30 minutes.
7. When cooked through and the meat is falling off the bone, remove from the barbecue. Check that the centre of the meat is not pink and the juices run clear, then serve immediately.
