RICE SOUP WITH CHICKEN

This heartwarming thick rice soup id a typical breakfast

INGREDIENTS

» 2 1/2 litre chicken stock 

» 1 tbsp ginger, finely chopped 

» 2 chicken breasts, 2 chicken legs 

» 5 cups of rice, rinsed and drained 

» 1 tbsp pure vegetable oil 

» 2 tbsp fish sauce 

» 1 clove of garlic, finely chopped 

» 3 spring onions

» 2 shallots, finely chopped 

» 1/2 tsp black pepper 

 

 

Chicken Vermicelli Soup

GARNISH

» fresh herbs (coriander, basil)
» sections of lime

STEP BY STEP!

1/ Bring the chicken stock to the boil.
2/ Poach the chicken fillets and chicken legs for 15 minutes till done. Remove them from the stock and set them aside.
3/ Put the oil in a pan, sauté garlic, shallots, ginger and rice on a low heat Stir well until the ingredients have absorbed the oil: Add all this to the chicken stock. Let this cook gently for 30 minutes, until the rice is soft.
4/ Add the fish sauce, the white part of the spring onion, and pepper, finish off with the finely chopped green of the spring onion and with herbs, (If desired, sprinkle a little lime juice over the soup.
