GRILLED PORK WITH RICE NOODLES

» 2 green spring onions, cut into thin circles | » 300 ml Nuoc Cham (Dipping sauce) |
» 3 small (dried onions) shallots, chopped finely | » 300 g of dried rice noodles, boiled for 4 |
» 2 tbsp of fish sauce | to 5 minutes and rinsed under cold water |

» 250 g pork (pork meat), cut into fine long pieces | Thai basil…) |
» 250 g of minced pork |
STEP BY STEP!
1 First, make a marinade. Put the spring onions, fish sauce, shallots, salt and pepper, caramel, in a mixing bowl and stir them up well.
2 Pour half of the marinade’over the strips of pork, the other half over the minced pork and mix each one well. Leave them in a marinade for 30 minutes.
3 Shape the minced pork into more or less oval mince patties of about 5 to 6 cm by 2 cm.
4 Add 1 tablespoon vegetable oil to the pork strips.
5 Grill the pork patties and the pork strips on both sides until they are done, preferably over a charcoal fire.
6 Put Some pieces of the hot pork in the Nuoc Cham dip sauce and leave them to marinate for a few seconds.
7 Distribute the noodles over four individual bowls, put the pork on them with some dipping sauce if wanted, and garnish with a good quantity of salad and herbs. Enjoy!
