To taste: Pepper, vinegar, chilli sauce, fish sauce, seasoning (salt and MSG)
Preparation of Sweet and Sour Pork Ribs
Wash and cut the ribs into 3cm pieces, parboil and wash again. Drain and add the fish sauce, seasoning and pepper and leave to marinate.
Wash and drain the spring onions and coriander. Cut the white and green parts of the onions into 3cm pieces.
Mix more fish sauce with the chilli sauce, vinegar and sugar to make the sweet sauce.
Heat the oil, coat the ribs with the tapioca flour to make them sticky and fry until golden. Remove to a plate.
Fry the garlic with the white spring onions, add the sweet sauce and a ladle of water and bring to the boil. Add the ribs and cook, covered, over a low heat.
Once the sauce has combined with the ribs, add the green spring onions and stir. Remove from the heat, transfer to a plate and sprinkle with the pepper and coriander.
Serve hot
