BEEF WITH WILD MUSHROOMS
» Preheat the barbecue. Place the steaks on a chopping board and using a sharp knife, cut a pocket into the side of each steak.
» To make the stuffing, heat the butter in a large frying pan. Add the garlic and fry gently for 1 minute, Add the mushrooms to the frying pan and sauté gently for 4-6 minutes, or until tender.
» Remove the frying pan from the heat and stir in the parsley.
» Divide the mushroom mixture into 4 and insert a portion into the pocket of each steak. Seal the pocket with a cocktail stick. If preparing ahead, allow the mixture to cool before stuffing the steaks.
» Cook the steaks over hot coals, searing the meat over the hottest part of the
barbecue for 2 minutes on each side. Move the steaks to an area with slightly less intense heat and barbecue for a further 4-10 minutes on each side, depending on how well done you like your steaks.
» Transfer the steaks to serving plates and remove the cocktail sticks. Serve immediately with salad leaves and cherry tomatoes.

- 50 g/13/4 oz butter
- garlic cloves, crushed
- 150 g/51h oz mixed wild
- mushrooms
- 2 tbsp chopped fresh parsley
- salad leaves and halved cherry
- tomatoes, to serve
